I have my friend coming over tomorrow night and we are both trying to be very healthy. I need a low-fat, yummy meal that is quick to make - we both like pretty much everything. Any ideas?

Bake a couple of chicken boobies in foil with a chinese style marinade (2 tbsp dark soy, 2 tbsp honey, 2 tbsp dry sherry, 2 chopped shallots, 1 chopped garlic - divide between the two parcels). Bake for 20 minutes @ 180. Serve with steamed rice mixed with chopped spring onions and water chesnuts. Nice if this sort of thing floats your boat!
marinade some diced chicken breast in low fat greek yoghurt mixed with chopped corriander, cumin, turmeric, garlic and a dash of lemon juice....maybe add a bit of chilli if you like it spicy.

Thread onto a skewer and either cook in the oven, grill, griddle or barbeque.

Serve with rice salad (rice with finely sliced peppers, onions, peas, sweetcorn and pineapple) or couscous
the simplest and the best-steak and salad!
Salmon and cous cous.
