How about this.
finely chop onion and sweat in pan with butter.
Flatten one chicken breast between cellophane, then spread with cream cheese and place spinach on top. Roll chicken into roulade, wrap tightly in cellophane (twisting the ends) and poach 10-15 mins in simmering water.
Grate the cheese.
Add chicken stock to onion, salt pepper, cream and tarragon, reduce until sauce thickens slightly.
Put grated cheese in plastic bag.
Boil some new baby potatoes, drain, add butter to pan and chopped chives, toss together.
Put plastic bag of cheese in fridge.
Unwrap chicken roulade, place on plate along with spuds, pour over tarragon sauce.
Feed bread to birds.
