The classic is VERY fresh tomatoes-finely diced and mixed with good olive oil, finely minced garlic and basil. This is not heavey at all. Also-instead of buying bruschetta-get a good french stick and cut 1/4" slices on the diagonal-toast these under the grill and then load your topping on. You could akso try sauteed garlicky mushrooms or black olive tapenade. In fact-the hell with the lasagne and just have a meal of bruschetta and salad!!-yum!
we put a homemade gaucamole on them (avacado, tomato, red onion, garlic, lemon juice, salt pepper, all mashed up), thats delish and everyone goes made for that.
you could just peel a garlic clove and rub it (quite hard) all over the bread, thats nice too.
