Crudites are julienne - small strips or slices - of vegetables, most often served with a dip like anchoiade, aioli, etc. so basicaly a French term for grated veg.....
They can be made from a stack of different veg - cucumbers, carrots, celeriac, tomatoes, beetroot, peppers, red, yellow and green peppers, fennel - and served with salad leaves as well as celery tops, with oilve oil dressings, with flavoured mousses, with cheese dips etc etc.
Don't buy the cut up ones though from the shops - they are almost always stale and tasteless - buy the veg and make at home - takes seconds......
