What does a city in the ukraine have to do with the actual dish?

Suprisingly enough, nothing at all :) It was originally called Chicken Supreme, and the recipe was invented by a Frenchman called Nicolas Appert. The name got changed to Chicken Kiev when the dish was brought to New York restaurants. The owners were attempting to please many Russian immigrants living in NY City at the time. Hope this helps :)
