We bake a lot of our own bread but have never been successful in getting the crust to be crunch. Does anyone have a tip please?

Mix egg yolk with water and brush on before cooking. It gives a nice shiney crust. Enjoy!
Dried milk powder in the mix will work.
Hi, at catering college we were always told not to cover the bread after the second proving if we wanted a crusty loaf.
