Does anyone have a packet of Uncle Ben's Express mushroom rice in their cupboard? If so, does it have a recipe for quick mushroom risotto on the back? I just bought a packet intending to follow the recipe which I tried a few weeks ago (and it was very nice), only to find that the recipe isn't there! I can remember most of it, I'm just not sure about quantities. If anyone has it I'd be very grateful if they could post it here.

Mushroom and Ham Risotto

1 cup UNCLE BEN�S� ORIGINAL CONVERTED� Brand Rice
3 1/2 ozs. cooked ham diced
3 1/2 ozs. mushrooms sliced
1 onion peeled and chopped
2 Tbsp. butter
1 oz. parmesan cheese
1 Tbsp. oil
2 cups chicken stock

1. Heat the butter and oil in a large saucepan and fry the chopped onion until soft.
2. Add the mushrooms and ham and fry for 2-3 minutes, stirring continuously.
3. Add the rice and cook for a further minute, while stirring.
4. Pour over the stock, add salt and pepper to taste and bring to a boil, again while stirring.
5. Cover the pan with a close-fitting lid and simmer gently for 15-20 minutes until all the stock is absorbed.
6. Stir in the grated cheese and season to taste. Serve at once.

Seafood and Mushroom Risotto

1 cup UNCLE BEN�S� ORIGINAL CONVERTED� Brand Rice
1/2 lb bay scallops
1/2 lb shrimp, peeled, de-veined
2 Tbsp. butter
1 cup shallots chopped
1/4 cup fresh parsley coarsely chopped
2 tsp. fresh basil finely chopped
1/2 lb mushrooms chopped
1 clove garlic minced
3/4 cup dry white wine
1 tsp. salt
1 Tbsp. olive oil
1 dash cayenne pepper
1 cup clam juice
3/4 cup water

1. Saut� mushrooms in 1 tablespoon of the butter in large saucepan, until tender. Remove mushrooms and set aside.
2. Add remaining 1 Tbsp. butter and olive oil to saucepan; stir in rice, shallots and garlic. Cook over medium heat, stirring continuously until rice is lightly browned, about 5 minutes.
3. Add clam

3. Add clam juice, wine, water, and salt. Bring to a boil. Cover tightly and simmer 15 minutes.
4. Stir in shrimp and scallops; continue. Remove from heat. Stir in parsley, basil, cayenne pepper and reserved mushrooms.
5. Let stand covered until all liquid is absorbed, about 5 minutes.

Thanks for replying - sadly neither of those is the one I was after. I tried the website, feeling sure that the recipe must be there, but it wasn't. I tried to re-create it from what I could remember but I must have left something out because it wasn't as nice.

The mushroom and ham one looks good though. Maybe I'll try that next time.
