eggs over easy

you hear this said in american tv and films, but what does over easy actually mean? and how many other ways can you have your eggs?
Please try and resist the urge to post any eggcellent jokes, they just crack me up

Here in the U.S., there are regional coloquialisms re: preparing eggs, but, generally, over-easy means to turn the eggs only once and finish when the yolks are still runny. Over-hard, is the same thing but with the yolks cooked through and of course, sunny side up... eggs not turned at all with the yolks runny... the order to the cook is to be Quiche about it! You get only one answer, so omelet you off easy this time, get the frittata here.... That's it! I call an eggs ban edict....
What puzzles us, I think, is that the egg can be turned over . How do you turn an egg over without breaking the yolk? The yolk stands pretty high on a fresh egg. And why would you bother? Here (this household and ,so far as I know, the whole of Britain !) we just tip hot fat onto the yoke to quicken the cooking of it

I dunno, all these foreigners and their fancy cuisine !

Sometimes I like my egg runny, in that case ill spoon the hot fat onto the yolk. Other times i prefer it more cooked but still quite soft in the middle so ill turn it over for just a few seconds. My whole family turns the egg over onto the other side and my mates, its not a foreign thing...mind u we are Welsh!!
