It is important not to overmix, just gently bring it all together, this will give you a more tender meatball. firm up the mix in the fridge for an hour then roll walnut sized balls and brown in olive oil. drop them carefully into your tomato sauce, simmer gently for 30 minutes and serve over your favourite pasta with a little freshly grated Parmesan.

Make albondigas - Spanish pork meatballs as above, serve with chilli dip as part of a tapas meal...
Use in lasagne, or moussaka, add to a meatloaf, definitly use in a chili, use in burritos, fry and crumble over jambalaya, fill wontons and add to chinese soups or spice it up and fill samosas and fry til golden.
Make a Morrocan spiced shish kebab marinaded in orange juice, cumin, chili amd paprila, formed into kebabs and gently grilled to cook.
Use in a meatball paprikash, or other meatball stew, served with noodles or over cooked plain rice or a good creamy mash or colcannon.
Fry season and add to spinach and ricotta as a filling for cannelloni.
Stir fry with cashew nuts and veg, make pork pies, cook, season and stuff fried rice balls, make more meatballs and a sherry and orange sauce to go with them - add some sherry to a pan with some stock, soy sauce, thiken with a touch of cornstarch and finish with asplash of fresh orange juice....
Add ginger or apple or asian spices - all go really well. Use to stuff veg like aubergine, peppers or beef tomatoes.
Hope this helps some...

You could try Stuffed Peppers:
Put the mince, chopped spring onion and mushrooms into a pan and fry for about 5 - 10 mins. Add 2-3 tablespoons of soy sauce and 2 tablespoons of basil (freshly chopped is best but you can use dried)add an ounce of fresh breadcrumbs and mix thoroughly.
Blanch the peppers then fill with the mixture and sprinkle grated cheese on top. Cook in the oven and 190 for 45 mins (remove the lid from the dish for the last 10 mins.
Enjoy
