A chef on a cookery prog once said that the best way to cook mince so it broke up properly was to stir it with a wooden fork-type implement, rather than a spoon or spatula.
Never got round to buying a wooden fork, so let me know if it works!
I cook my mince in a casserole in the oven.
Add a stock cube and water to the mince and also an onion if you like onion.
Mix it with a fork and cook in a slow oven for a couple of hours. In fact, you can add whatever you like to the mince.
I never fry the mince.
Just throw it into the casserole raw with the stock and then cook it on the oven.
It is the frying that makes it go into clumps.
Best way is to buy steak mince from the freezer cabinet at Morrisons, it is in short pieces and it cooks up beautifully with no clogging,just keep it stirred. I cook it in a wok for a curry.

I do it by frying it on a high heat & breaking it up with a wooden spatula but i've also finished it off with a potato masher (which was ok) and i've tried soaking the mince in a bowl with warm water which breaks it up (and gets rid of the ikky blood & smell) let it soak for upto 20 mins, drain in a colander and it cooks like finely minced meat.
