can anyone help me i need a recipie for diabetic icing for a wedding cake. Please help!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

I found this recipe in Good Food For Diabetics which gives its source as the British Diabetic Association.
It recommends that the icing is prepared on the day of eating, if possible!
Ingredients:
50g(2oz) fructose
pinch of salt
1 egg white
2.5ml (0.5 tsp) lemon juice
This is sufficient to cover a standard cake.

Put the fructose into a liquidiser or food processor and blend until the powder becomes as fine as ordinary icing sugar. Transfer to a bowl and mix in the salt well. Whisk in the egg white and lemon juice.

transfer the bowl to a saucepan a quarter full of simmering water and continue whisking until stiff peaks form. Take from the heat and continue whisking until cool. Spread over the cake with a spatula.

do you know if it sets like sugarpaste? or not? but thanks for the info i have been surfing for hours. Do you think that i could use this as a basis for amking my own sugarpaste? maybe i'll give it a try.

hi. i am just wondering why you need to make 'diabetic' icing. the amount of icing on a slice of wedding cake is very small and can always be put to one side by the person eating the slice, which many non-diabetic people do anyway. or are you expecting a lot of people with diabetes? my son has diabetes and on occasions such as weddings, parties, etc., allows himself a very small amount of whatever he wants, as recommended by all diabetes specialists. we have always been told to steer clear of special 'diabetic' products.

oh ok well it was request i am making the cake and the bride requested it.
