I went out for dinner and had a caramalised red onion and feta (I think) tart as my starter. It was really nice. Does anyone have a recipie so I could try to make my own? Thanks x

Caramelised Onion Tarts with Feta Cheese

25g/1oz unsalted butter
375g/ 13ozs ready rolled shortcrust pastrey
750g / 1lb 10 ozs red onions, thinly sliced
1 1/2 tablespoons soft brown sugar
1 1/2 tablespoons balsamic vinegar
1 teaspoon chopped fresh thyme
salt & pepper
100g /3 1/2 ozs Feta cheese
Thyme sprigs to garnish

Cook the pastrey 'blind' for about 15 minutes, ( preheat oven to 180/350/gas 4) -using either a large pie plate or small patty tins for individual tarts.
Melt butter in frying pan, add onions & cook over a low heat for 40 minutes stiring frequently.
Add brown sugar, balsamic vinegar, chopped thyme and salt and pepper
Cook for a further 10 mins, then spoon into pastrey shell or shells.
Crumble feta over the tart and place under a hot grill for 30 seconds or until the cheese begins to melt.
Garnish with thyme sprigs and serve immediately.

my sister made goats cheese and caramalised onion tarts at christmas - a labour saving tip is to use a jar of caramalised onions from good old M&S - sure would be lovely with feta too.

Thanks Ginny. I made some this afternoon to try it out and they were fab. Thanks for the tip Joannie, I made some with goats cheese too and they were well nice. Thanks again x
If you like mushrooms try adding some in together with the onions. I use a combination of yellow and red onions. Delicious!!
