Hi, When heating/boiling things, that are solid, ie, rubber, metal, foods, they tend to melt, with the exeption of eggs, which turn solid...why?? Steph

Heating or boiling eggs turn solid because eggs are protein & the process strengthens the molecular bond. In the others (rubber, metal, choclate) heat weakens the bond. Water gives an example of transfer from liquid to solid/ice or gas/steam.
just to be accurate, steam is not a gas, it is a vapour, ie tiny droplets of liquid water in a cloud.
You can also 'cook' the white of an egg by freezing it in liquid nitrogen. It remains white solid once warmed up.
