Can anyone give me the best roast pork recipe, i want crispy crackling and very tender pork.

My mum told me that Jamie Oliver said to use Duck fat in order to get crunchy crackling

Well I cooked roast pork yesterday with lovely crackiling and I always rub the scored skin with olive oil and salt and when the joint is cooked I remove the crackling and lay it on a piece of foil in the oven while finishing off the roast potatoes .crisps it up even more. Mind you I always buy my Pork from a farm shop. I fund supermarket pork not so good for crackiling.I cook my pork at 160 in my fan oven and the crackling is in a hotter oven for the potatoes.

Tender pork will depend on the cut used. I always prefer shoulder of pork as it's more tender but leg is leaner. Best option is to be fussy and ask for lean shoulder. I use sunflower oil and salt for crispy crackling and remember to leave the roasting dish lid off for half an hour at the end.
