Double cream's too thick and rich...

...if you can't get sour cream, use single cream soured with a little lemon juice.

My mum always did it with rice ( I seem to remember, manymoons ago) but all recipes seem to do it with noodles, what would you do ?

I know this is probably too late..but you can use creme fraiche----French soured creme,and you can get it in a low-fat version.
