Lovely Salad Boxes

Does anyone know of any get salad box recipies? A place by where I work makes them with potatos, main filing and all the bits and bobs and they are lovely but they are so expensive that I wanted to try to make them for home but I do not really know where to start!

For lunch today, I strolled down to my local deli and filled a bowl with a spoonful of each of the following:-
Potato salad
Chopped iceberg lettuce
Sliced cucumber
Grated carrot
Kidney bean and butter bean mix
Pasta salad
Plain Cottage cheese
Rice salad
There were lots of other salads available (coleslaw, grated cheddar, pickled beetroot, mixed pepper salad, tomato chunks, pickled onions, mushrooms etc) but what I had was more than enough for me.
Do you mean you would like recipes for some of these ?

Pasta salad....cook pasta, stir in tomatoe pasta sauce (Ragu original is nice) leave to chill..sorted
Potatosalad. Cook potatoes, choose a waxy or new potatoes. Cool. I add chopped hard boiled eggs and finely chopped chives to mine. Some folks like chopped spring onion.
Coleslaw, finely slice carrot and white cabbage (if you have got a foor processor use the fine slice) add mayo. You can also add onion to this if you like.
Cous cous is nice. cook as packet and cool. keep forking through to stop it clumping. I add a chicken stock cube to the cooking water for flavour. Fry up chopped courgettes and mushrooms or add peppers. You can add cinnamon and ground cumin for a moroccan twist. It is also nice if you add lime juice (although you might want to sweeten it slightly if you do).
You can buy kidney and butter beans tinned. But make sure you rinse them well and dry them. If you put a mixture of oil and wine vinegar on them it will keep them from drying out.
I could go on for days. Well done you for thinking of saving some money. These salads are such a con.
Oh and if you buy a bag of rocket you can use it in stir fries too. Or you can used baby spinach. When you have used half the bag just pour hot water over the other half in a colander for a quick hot veg. Yummy
