I am having a 90th party for my Mum.We are having hog roast,(not the whole pig, but rolled boned legs of pork) beef and ham, salads , little potatoes, rolls. Can anyone help with amounts for 150 people for the salads . Its just basic salad ingredients, nothing fancy. Iceberg lettuce,sliced tomato and onion,cucumber,grated celery,etc.
I am ok with the amounts for the meat. Many thanks in advance.

I would go to a wholesalers (every town has one) and go by price as opposed to weight/portions.

Set a budget and say to the costermonger "Give me �150 worth of salad fruits" etc.

Surely easier than faffing about with portion control.

And at a wholesaler you will save about 40-50 percent compared to Supermarkets and Farm Shops.
Delia is good with portion control. Also 'Good Housekeeping'magazine. I once did salads for 70 people and managed to get it right via Good Housekeeping. Maybe you could 'scale up' to the amount required. Good Luck. And I hope the weather is kind!
hi, i have just done a couple of parties, (ex chef!!), id say about 3 iceburge (shred them), 2/e cucumbers thinly sliced, why not do some coleslaw, white cabbage, onion and grated carrot and some mayo?, people wll only want a small bit of everything, dont do too much or it will go to waste, if you want any more receipes let me know :)
