I need a quiche recipe good enough to win a quiche compettion. maybe something with a twist but has to be tried and tested, and somthing everyone may like.

I use half wholemeal flour and half white flour and some finely grated parmesan in the pastry, bake it blind, allow to cool, then sprinkle some golden breadcrumbs on the base before adding saut�d onions and mushrooms. The egg mix contains free range eggs, whizzed up cream cheese, some feta cheese and lots and lots of seriously mature/strong cheddar.
The breadcrumbs absorb excess liquid and give a lovely crunch to the pastry base. You could also sprinkle a little cayenne pepper to the top of the egg mix before baking - that looks great !

I make a fabulous creamy smoked salmon quiche which will win every time. Make a 10 inch pastry case and bake blind. Gently fry 6 finely chopped spring onions in 1oz. of butter until soft but now browned.Beat 5 eggs in a bowl then add onions and 10 fl. oz. single cream and mix well. Lay 6oz. smoked salmon (trimmings will do and cost less!) in pastry case and pour over egg mixture. Sprinkle with 1 and 1/4 oz. of grated cheddar cheese. Bake at 180C Gas mark %, 350F for 40-45 minutes.
