The life of gluten free cooking is an art.
This week I see the bananas in the fruit bowl are going brown again so banana cake with raisins and pecans is happening tomorrow.
I use this recipe for the pineapple one:

and this one for banana cake, adding pecans and raisins:
5 OZ BUTTER OR MARGARINE
4 OZ CASTER SUGAR
6 OZS SELF RAISING FLOUR
3 BANANAS
3 EGGS
2oz Desiccated (flaked) Coconut(Optional)
Cream together the butter and sugar until light and
fluffy.
In a separate bowl beat the egg and then add to the
creamed mixture.
In a bowl cut up the bananas and then mash them down
to form a lumply texture and then add them to the
creamed mixture
Stir in the flour.
Place the mixture into a greased 2 lb loaf tin.
Place into a pre-heated oven at gas mark 4 for 35-40
minutes or until the top springs back.
When cooked remove from tin and place onto a wire
rack and leave to cool.

I am a carrot cake man really, or the passion cake variety to be honest with the frosting. if you want to try something different try this:

It is Pretzel salad, the pretzels are the little knot shaped ones that you get at xmas with some savouries like twiglets. Yes those little salty things. You basically use them crushed up as a base like a cheesecake base, with cream cheese and superwhip ( they say frozen whipped topping), with a layer of jelly with straberries on top.
It sounds wierd, when i was told by my gf in the states i was very dubious, until i tried it. You can have it as a desert with cream etc. or with turkey can you believe. I really like it, don't be afraid of it, have a go.

6 oz soft dark brown sugar
6 fl oz corn/sunflower oil
3 eggs
5 oz plain flour
1 teaspoon bicarb
1 teaspoon baking powder
1 teaspoon cinnamon
0.5 teaspoon nutmeg
8 oz grated carrot
chopped walnuts
sultanas
grate carrot
blitz all ingredients except walnuts, sultanas and carrot.
add walnuts, sultanas and carrot and pulse briefly
grease and line a square or rectangular cake tin (or use rubber tin)
bake at 350 for around 20 - 30 minutes
it depends upon how deep the mix is.

Butter 2 large ramekins and dust with cocoa powder then put in fridge. Put oven on at 160/gas 2.
Ingredients:-
50g unsalted butter
50g dark chocolate 70% cocoa solid
1 whole egg and 1 egg yolk
50g caster sugar
50g plain flour
Melt the chocoate and butter in a bowl over a pan of hot water, and stir till smooth.
Whisk the whole egg and yolk together with the sugar until thick. I'd use an electric whisk for this. Fold the chocolate mix into the egg mix and then sift the flour in and fold again until completely mixed.
Pour mix into chilled ramekins and bake for 12 minute. Any more and you won't get gooey centre.

SERIOUSLY, TRY THIS ONE, ITS EASY.
Line 7" cake tine with greaseproof paper. Cream 6oz of butter and 6oz caster sugar. Beat in 3 eggs, one at a time.
Fold in 6oz sifted flour and add 2 tbs cold milk with last tbls of flour. Add grated rind of one orange then bake at 350 deg for 1 hour or until well risen and golden brown.
When nearly cool make slits across the top of cake with a sharp knife or puncture with knitting needle, then drizzle orange syurp or liquer across the top so that it soaks the cake. Cover the cake with melted chocolate (dark) and leave to cool and set.
Serve with clotted cream and enjoy.
Its is so easy, even I can do it!
