I have been given a gift of sliced black truffles in extra virgin olive oil ,any printable suggestions what to do with them ,also how long will they keep after opening?
I would think they keep for a couple of weeks in the fridge, once opened, but if you don't think you'll eat them all in that time, I'm sure you could freeze them (do it in small portions so you only take out what you need for one dish at a time).
Try using a litle through a wild mushroom risotto, or sparingly through scrammbled eggs. They go wonderfully well with potato too, so you could try beating them through some mashed potato, ot on top of a fondant.
Once you've used the truffle slices, make sure you keep the oil as that will also be beautiful through a risotto or as a dressing for cooked game birds.
You lucky devil!! You can grate them (sparingly, as already mentioned, they are quite strong-flavoured) over pasta or in a risotto - I'm just totally envious!!
