Desperately seeking the PROPER sauce you get with duck and pancakes (chinese) but the plum sauce you buy from local supermarkets just is not the same? Where can I get the really thick proper stuff and what's it's proper name?

Yes you can buy Hoi Sin Sauce from Tesco or Asda.
Hoi Sin Sauce straight from the can/bottle is too rich. Dilute it with 1tbs of boiled water to 2tbs of sauce and add half of lemon juice with abit of peel then simmer in a low heat for 5-10min. Let it cool then shove it in the fridge it should thicken, although you can spread whilst it's hot.
That's what I usaually do whenever I make my own crispy duck . Yum!
