Anyone know a good dish I could make with Fetta cheese.
the only think i know is a greek salad.

100g puy lentils
1 bay leaf
150g green beans, trimmed & sliced into fourths
1 carrot, peeled & sliced
1 stick celery, diced
2 tbsp coriander, roughly chopped
1 small red onion, chopped
75g feta, crumbled
2 tbsp toasted sesame oil
1 tbsp rice vinegar
salt & pepper
1) Place the lentils in a saucepan with the bay leaf and 250ml of water. Bring to a boil, cover, lower the heat and simmer for about 20 minutes, or until the lentils are tender. Discard the bay leaf, drain the lentils, and leave them to cool.
2) While the lentils are cooking, chop the beans, carrot and celery. Put them in a steamer for about 10 minutes or blanch them in boiling water for about 1 minute - they should be crisp, crunchy and bright in colour.
3) Toss all of the cooked ingredients, along with the coriander, onion and feta in a medium sized bowl. Whisk together the sesame oil and rice vinegar and dress the salad. Season with salt and pepper to taste.
(Serves 2 as a main dish or 4 as a starter.)
This is how it appeared on the website but I tend to alter it a little to suit my taste ie I sometimes reduce the amount of sesame oil or don't use it at all because it can be a bit overpowering. I just use regular oil.

Saganaki is beautiful, one of my faves!
Just sweat some finely chopped shallot in a little olive oil, add a touch of garlic, then some fresh uncooked prawns (any type will do, tiger, king, atlantic - but they're best cooked as they come, with the shell and everything still on).
Cook for a couple of minutes on each side, until they start to turn pink, then add some white wine and freshly chopped tomatoes. Allow to reduce a little, season with salt and pepper, a squeeze of lemon juice, and then crumble some feta cheese into the pan. Finish with a little fresh oregano, or basil. Serve with chunky bread and a large glass of chilled white wine. Mmmmmmm!
You can also make the same dish using mussels instead of prawns.

I make a mean cheesy quiche using wholemeal flour for the pastry, then three different cheeses (feta, smoked applewood and white stilton or caerphilly, all cut up into little cubes) mixed up with a couple of eggs and poured over some cooked veg into the blind baked pastry case... Bake for like 30 minutes until golden and set... awesome... (don't add any salt to the pastry though, as the Feta cheese is quite salty already).
