Hi, does anyone have an easy recipe for a quiche (not the pastry). I can make the pasty but have seen various recipes online that have included 1 egg up to five eggs so does anyone have a quick, easy recipe for a quiche filling? Thanks

basic quantities, 4 eggs, three quaters of a pint of milk, 8 0z of cheddar cheese. Everything else is up to you, just bung it in. Gas mark 6/ 200C/ 400f for 30 mins xxx

My basic quiche filling is
1 onion
15g butter
7 (yes, seven) large eggs
320ml double cream
40g grated parmesan

Melt the butter & cook the onion til translucent. In a bowl, beat the eggs til blended, then add the cream and parmesan. Mix in the onion. Pour the lot into your pastry case & cook for 25 mins at 210c/gas 6.

This is a basic cheese & onion quiche but you can add whatever ingredients you like to the mix, such as ham, asparagus etc.

7 eggs may sound a lot but this quiche rises beautifully.
