Chilli Sauce - Storage
5 Answers
Fellow eaters of food, a question I have. I recently bought a shed-load of red chillis from the Chinese supermarket and am going to make some chilli sauce containing left-over chillis, white wine vinegar, tomato, etc. My question(s) are: how long will this keep in a sterilised jar? Does it have to be airtight or can it be stored in an oil-pourer type jar, does it have to be kept in the fridge? I thank you all 1000 times each.

errrr just by eye really!
about 10% ginger, garlic and sugar to chillies, 1 or 2 lemons, and enough oil to make it blend, and then taste it, add the salt and pepper, and taste it until it tastes alright, though does need quite a bit of sugar, helps bring the flavour out, and counteract the slight bitterness, if that makes sense
i like it, i prefer the fresh flavour of the ginger and chilli to the cooked type sauces, though it is a bit tangy!!!!
