The coffee cake I make is quite rich and moist. The recipe I use is
10oz flour
8oz Butter or marg ( butter is richer)
4 eggs ( weighed to 8 oz )
8 oz caster sugar
Camp coffee - in a bottle - tablespoon and then more for your taste add it bit by bit until it tastes strong enough
Bake on gas mark 5 for 30mins or until cooked
Fill with butter cream-
icing sugar
butter
coffee granduals mixed with small amount of hot water - let cool right down, add to your own taste.
put on between two cakes and on top
