anyone got any different vegetarian recipes? I'm fed up of the same old same old.

Polenta is always great. Are you vegan? If not, there's a cheesy polenta recipe that is fantastic.
Put in a saucepan:
1 c water
1 c milk or rice milk
1 tsp salt
a few sprinkles of ground nutmeg
Bring to a boil, then turn down the heat. Add:
1 c cornmeal.
Whisk constantly until polenta pulls away from the sides of the pan, about 5 minutes.
Take it off the heat and stir in 1.5 Tbs butter and 1/4 c grated parmesan.
Grease a square baking pan, and spread half the polenta in it. Add a layer of grated cheese (sharp cheddar works well). Spread the rest of the polenta over the cheese. Cover with 1/4 c grated parmesan, and dot the top with 0.5 Tbs butter, cut into bits.
Let it sit to firm up for 15 minutes, then bake at 350 until the top is brown and bubbly (I think about 30-35 minutes). Wait 5-10 minutes before cutting into it.
This is excellent served with a spicy tomato-vegetable sauce, or with sauteed zucchini and mushrooms. Also would be good with a ratatouille or any bean/corn/ chile type dish.
Potato knishes are also really great. Per 2 knishes - 1 cup boiled, mashed potatoes, 1 egg, a pinch of salt, and enough flour to make a firm dough. Mix all ingredients together and form balls. Bake on a greased cookie sheet at 375 for 20-30 minutes. This can be doubled or tripled. You can alter it as you like - add caramelized onion, or sauteed spinach, or anything else you like. You can also brush the top with beaten egg for a nice brown top. Serve with spicy mustard and/or sauerkraut.
Coconut milk curry:
Saute some onions in oil until brown. Add 1 can coconut milk, 1-2 Tbs red curry paste (depending on how spicy you like it!), and a Tbs of sugar, and stir until the paste is dissolved. FOR NON VEGETARIANS - you can also add a Tbs or 2 of thai fish sauce. Bring to boil and turn down the heat. Add any combo of veggies you like - I prefer baby bok choy, mushrooms, sliced red bell peppers, and sometimes broccoli. Also add cubed tofu if you like. Simmer until the veggies are done. Serve over brown rice.
This is FAB... Mexican frito pie!
Fry onions, chillies and beansprouts.
Heat up two tins of refried beans (add a little water if they are too stodgy to stir)
Layer in a dish onions, refried beans, layer of tortilla chips, grated cheese until the dish is full. Decorate with lots of cheese and sliced tomatoes.
Cook in oven til golden brown on top.
I can eat GALLONS of this......! Great for the munchies.
