Parboil the potatoes, allow to cool a bit, then thickly slice them. Grate your cheese and do the usual cookery stuff to your bacon. Steal an onion or a bunch of spring onions from your neighbour or buy some if you can (better to buy and stay honest and good), then chop them up. Beat a few of the eggs (depends on how big your potatoes were) to within an inch of their lives. Arrange a layer of the potatoes in an oven proof dish, season well with salt and pepper, then sprinkle some of the cheese, chopped onion and bacon, then another layer of potato (seasoned), cheese, onion & bacon. Continue the layers until everything is inside the dish, pour over the shivering wrecks of egg and bake in a pre-heated oven (Gas 6, 200 deg C) for about 40 minutes. Serve up with steamed veg (say sweetcorn or broccoli or petit pois) with a little knob of butter.
