I am sure I read once that the chinese marinate the chicken either in a cornflower mix or egg whites, I have googled and found nothing, I didnt dream this,(I hope) any help would be much appreciated, thanks guys

I always do this before making a Chinese curry and have started to do this for other dishes. Cut chicken breasts into bite sized chunks. Place in a bowl with an egg white, 1 teaspoon sesame oil and 2 teaspoons cornflour. Mix well and place in fridge for 20 mins- I often leave it longer. Boil pan of water, add the chicken pieces stirring to prevent it sticking. Boil until white ,about 4-5 mins. Drain and use the chicken as wished
