can anyone give me a real easy recipe, i am fed up with my usual one.

This is one I do the day after a roast beef dinner. Adjust to however many you are cooking for.
1piece Fresh ginger grated or finely sliced
Garlic (1 clove or 3 or as many as you want)
Onion (choped)
Green chillies sliced, with or without seeds 1 or as many as you like....
1 apple chopped
Tomato puree (1 desert spoon) or good squidge of ketchup
Curry powder (1tbsp)
Cumin (2 tsp)
Coriander (2 tsp) (plus fresh)
Turmeric (1tsp)
Cinammon pinch to 1/2 tsp
Branston pickle (1 tbsp)
Beef stock (1 pint)
Options to add are:
Spinach if you want more veg.
Tin of chopped tomatoes
Cubed cooked roast beef
Fry onion, with herbs and spices till slightly softened, add ginger and garlic and fry a few minutes more. then add the apple and chillies continue to fry.
Add tomato puree, stir, and then add stock and branston pickle. (I add tinned toms sometimes at this stage)
Simmer, for about 20 mins whilst rice is cooking. I add a bag of spinch 5 mins before end of cooking then....
Add diced cooked meat to the curry sauce, heat through thouroughly. Stir in fresh chopped coriander.
Serve with rice and naan.

I always make my own curry paste by putting the following ingredients into the processor:
Onion, garlic, ginger, fresh chillies, sweet chilli sauce, lime pickle, mango chutney, a squeeze of lemon or lime, coriander seeds, cumin seeds, fenugreek seeds, hot chilli powder, black peppercorns, garam masala, tiny pinch of cinnamon, and cardamon pods. (It helps if you crush the spices first). You could try marinating the meat overnight, which would tenderise it, and adding yoghurt during the cooking process.
