I have some wonderful pork chops from farm shop. They have the kidney and a layer of fat, just like the old days when my Mum used to keep her own pigs.Im not sure whether to just oven cook, or do them with some kind of sauce. It would be nice to have the rind crispy too, any ideas for something not too fussy. Many thanks .
If you want the rind crispy then you will need to oven cook them - a little salt in the rind helps too.
Then why not make a sauce to go with it. Try frying a medium chopped onion in a little butter until soft, then stir in 1 tablespoon of flour and some seasoning. Blend together and add 3/4 pint of vegetable stock and a diced cooking apple.
Next add 1/4 pint of skimmed milk and heat gently.
You can use just over the meat or as a tasty gravy
