I've just rolled some brisket with gardening twine, you can use elastic as long as its coated in material and a rubber band would be okay if you are going to wrap the joint in foil. I stuffed a pork loin last week with mincemeat and chestnuts, it was very good.

Thanks everyone .... theonlyone, as I am stuffing it myself, I can't ask the butcher to do it ...... stuffing it with bacon, apple & sage stuffing ... have only ever made this type of stuffing to serve on the side before.... so fingers crossed!!
