potato and leek soup

anyone got any easy recipe for potato and leek soup, must be quite easy. thanks in hope

3 large baking potatoes
1 large onion
3 large leeks
1 carrot
1/2 pack celery (say 10 sticks)
1/2 small chilli (optional)
5 bayleaves
2 tbsp boullion (I like Swiss Marigold) or stock
3 pints water
1 tsp mixed herbs
2 tsp olive oil
Chop all the veg - I like to leave the skin on them and chop them into quite large chunks. Saut� the veg in a large saucepan in the oil for about 5 minutes then add the water. Bring to the boil, add the boullion, herbs and bay leaves and simmer until the potatoes are cooked. Allow to cool then lift out ladlefuls of the veg and whizz up in a food processor or blender and return the *goo *to the pan. I like to leave some of the veg in large chunks but if you want a smooth soup, then process the whole lot. Check for seasoning and heat up gently. You may need to add a bit more water.
