But anyway, it's an easy test to make: cook fresh peach, taste. Who's got a fresh peach about the place?
Casey - nectarines are just varieties of peach which do not have the fuzz, so there is no consistent difference once the skin is off.
Another possibility is that different varieties are used for tinning.
Personally I much prefer fresh ones, if properly ripe -- I find tinned ones rather slimy (but why should that put me off? I like snails, pickled mushrooms and lots of other slimy things).
