You could try putting it into the pan again and bringing it to a rapid boil. Keep testing it until it gets to the soft ball stage. The other thing is you may not have got the mixture hot enough or you haven't beaten it for long enough. If you have the recipe post the ingredients and maybe we could work it out from that. Sometimes it can be the type of milk you use e.g. I would always use full fat milk and not skimmed or semi and condensed milk in favour of evaporated. Last but not least you could melt it and pour it over ice cream or eat it with a spoon and then feel sick LOL

Sorry its taken so long to reply. Working away for a while. Thank you for your help but I gave up on that fudge the minute I decided to try and freeze it but didn't put the baking tray in the freezer straight. It poured over everything in the freezer incuding the frost fan at the back causing the freezer to blow. As you can imagine the Good Lady was not to impressed. Next time I try some I shall definately call on your advice. Thanks once again, Jez..X
Oh dear, I can imagine you were popular. Better to visit Thornton's next time eh! LOL Thanks for replying.
