A tin of creamed coconut
lemon zest
garlic clove
small red chilli or maybe Thai curry paste
onion
Whack it all in a blender.
Add some hot water to get the consistency you want.
I leave my chicken in overnight,fish can be done on the day.
Score the chicken to get the flavour right in if using whole breast.
I don't use exact measures,it's purely to your own taste.
