8oz each of self raising flour, marg or softened butter and caster sugar.
4 eggs
1 tablespoon olive oil
1 heaped tablespoon coco powder
Sieve all dry ingredients together (keep aside)
Cream sugar and marg till light and fluffy.
Add 1 egg at a time along with a tablespoon of the flour mix, beat each in well. Beat in the oil. Then gently fold in the remaining flour mix till well combind. divide between two greased and lined sandwich tins. bake 190 c (fan oven 170) for aprox 30 mins. leave to cool in tins for 5 mins then turn out onto cooling racks. Leave to cool for at least 4 hours. Icing. Beat together 8 ozs of marg and icing sugar then add coco powder till you get to the chocolateliness that you desire. Spoon 1 third on one half of sponge spread evenly, place other sponge on top. Spoon another third on top and the remainder around the sides. This recipe works for me.
