Halve theh butternut squash and discard the seeds.Prick the flesh and brush with oil (I usuallu use olive oil). Bake for about 20mins @180 degrees(depending on size of squash)
Mean while put 200g spinach witha little water and some lemon juice into a pan and heat until wilted. When cool squeeze out the excess water and mix with 200g feta cheese and 25g pine nuts. Season if required (I just use black pepper)
Fill the squah halves with the spinach mix and bake for a further 10 mins.
Sometimes I scoop the flesh out of the entire skin and mix it all with the spinach mixture.
Usually have with salad but hubby likes jersey royals with it.

I'm out again tomorrow night , so will miss the festivities.
