my friend has just allowed me to try her special vinaigrette. It is perhaps the best vinaigrette i have ever tasted (very gentle and smooth) but she will not give me the recipe as it has been passed down from generations and is a secret. i am now quite jealous so please could you give me your best vinaigrette recipes.

Olive oil, balsamic vinegar, salt, pinch of sugar and a pinch of mustard powder. Shake it all up in a jar.

interesting hadn't thoguht of mustard powder before....
If shes your mate she should pass it on thats what its all about id love to try it
Mustard is a natural blender ( cant think of proper word!!) it enables the mix to mix better. I always use a bit in mayo and vinaigrette.
Hi zuzazak,

Mine's like abbie1977's recipe - two parts oil to one part vinegar, to taste -but I prefer dijon mustard already mixed in a jar (it acts as an emulsifier, Naomicorlett) and I like to add a crushed garlic clove as well! White wine vinegar is a good alternative to balsamic. And, yes, shaking in a jar is the most efficient.

Enjoy

thanks!

i think hers might use lemon juice rather than vinegar and i thought i tasted honey too...will need to experiment a bit
In France, some people use Melfor; it's a vinegar with honey added and a lot milder than plain vinegar. Don't know if you can get it in the UK.
What colour is her vinaigrette? Very pale yellow or pink?
