sometimes when i eat pork pie,it can taste a bit scented/perfumey, what could this be, ie is there a certain spice in there? some pies dont seem to have it, which would be more traditional for the flavour?

Bubbles, probably some spice or herb. Sage is a favourite, goes well with pork. Some people put cloves in also.

depends on what brand it is,the popular melton moybray uses all spice,
