Courgettes

I have just been given 2 courgettes measuring about 13 inches long and 5-6 inches in diameter. Any recipe ideas for me.

google --courgette soup --it is brilliant.
i have just googled courgette soup brenda and to be honest it wasn't that brilliant, infact it was hardly any different to googling 65 watt light bulbs

Is Baked Alaska your favourite Nok. Did think of soup Brenda but the kids are just about sick of it, I make soup out of everything.

You can make cake with courgettes (have done it successfully). Loads of recipes on internet

This is one of my favourite receipes

6 small to medium courgettes (Zucchini)
125 g grated Cheddar cheese
25 g wholemeal (whole grain) breadcrumbs
1 tbsp chopped thyme,parsley and wholemeal bread crumbs
Oil for greasing


1. Heat the oven to 180�c (350�f) gas mark 4
2. Lightly oil a large piece of foil.
3. Wrap the courgettes in the foil and bake them for 30 minutes.
4. When they are cooked, cut the courgettes in half lengthwise and scoop out the centres, leaving only thin shells.
5. Lay the shells on a lightly-oiled ovenproof dish.
6. Chop the vegetable flesh and put it into a bowl.
7. Mix in the cheese, fresh crumbs and herbs and pile the mixture into the shells.
8. Scatter the browned crumbs over the top and put the stuffed vegetables into the oven for a further 10 minutes.
I just wanted to add that a marrow is just a big courgette and yours are verging on the marrow size. I used to have a recipe for marrow cubes in an Italian style sauce, but long time ago. It was very tasty.

Lovely, thanks for your ideas everyone. Think I will do a mixture of suggestions, I'll stuff them with a ratatoille filling.

Where'd the other posts go , from NoK?
A bit late on the scene but this is good:

Ingredients:
pasta of your choice
1 tbsp olive oil
1 red chilli, finely chopped
3 cloves garlic, finely chopped
2 medium courgettes, grated
2 tbsp creme fraiche
zest of 1 lemon, finely grated
black pepper
parmesan, grated

Directions:
Start the pasta cooking. Heat the olive oil in a frying pan over a low heat, add the chilli and garlic, and stir but don�t allow to brown. Turn up the heat, add the grated courgettes and stir for a few minutes to allow any excess water to evaporate. Stir in the creme fraiche and lemon zest and season well with pepper. Drain the pasta and toss with the sauce, adding some grated parmesan and a drizzle of extra virgin olive oil to finish.

Variations:
Serve with griddled chicken or fish on top.

Androcles that sounds lovely, but too late. I ended up stuffing them with a ratatoille style filling with mozzarella on top. Twas lovely, the kids thought it was disgusting lol.
