Who were regarded as the top chefs, worldwide, before the current crop of small screen duffers we are hounded by now? And are there any genuine top notch people who get on with the job but shun TV?

Fanny Craddock, Robert Carrier?

There are an awful lot of Chefs/Cooks out there that shun the media but do very good jobs.

The top Chefs/Cooks of yesteryear didn't have the medium of TV, so had to use the medium of books.

Two of which were Escoffier and Beaton.

I meant Beeton.
Just think about it. Does anyone out there really believe that Jamie Oliver, Nigella Lawson, Delia et al are on TV because they are the best chefs in the country? They are on TV for one reason, and one reason only. They make good TV - they look good, sound good, or have a good PR machine. Be in no doubt they are not the best chefs!. The best chefs are too busy running kitchens to write books, or make TV programmes.
