I'm doing a test run for all my xmas day roast veg. Thought I might aswell take out a couple chicken breasts rather than having a plate full of veg for my tea.
Does anyone have any suggestions as to what I should to with the chicken? Want to just stick it in a dish in the oven to cook
For a roast chicken breast, you can cut a pocket in it and fill with stuffing. Use Paxo , about a couple of tablespoons, maybe a sliver of onion and some lemon zest, with water and microwave for a minute - minute and a half. Let it cool and then stuff into the pocket cut in the breast. Wrap the breast in a rasher of bacon, secured with a cocktail stick. Stick it in a dish and cover with foil, bake in the oven for about 45 minutes at 200C.
i know this will be waayyy too late, but you can save it up for next time.... slice an onion and place the pieces on to tin foil. put your chicken breast(s) on the layer of onion. if you have any onion left, leave it on top of chicken & season to your liking. i like sage and black pepper with this. wrap it up in the foil and bung it in the oven. no bother. you dont need oil cos it steams and stays lovely and moist. and i find you dont need salt cos the onion is flavour enough.
