What is the white piped decoration used on salt dough decorations made from?

I've recently started to make different types of salt dough decorations, but I don't know what the white piped decoration (usually seen on gingerbread men and gingerbread houses) is made from.

Can anyone assist me please? and if anyone can think of a more appropriate heading to post this question under?

Royal Icing

1 egg white
1/2 teaspoon lemon juice
1 3/4 cup confectioners sugar (powdered sugar)

I did think of putting it in food, but its actually craft making, and there isn't a category for that specifically.

Craft 1948. Is it just royal icing? I thought that it was even harder than that!

Water icing would be more suitable, just water & Icing sugar. Royal icing goes too brittle and you are also introducing a raw egg product which can cause health concerns
