Hi all, I hope somebody can tell me what's wrong with this recipe (I got it off the internet). It's an apple cake made with oil. Ingedients are: 2 Eggs, 250 mls veg/sunflower oil; 275 gms sugar; 275 gms plain flour; 2 tsp cinnamon; 1 tsp bicarb; 1tsp vanilla extract; pinch salt. 500 gms apples. The eggs are beaten with the oil until frothy then the dry ingredients are added with the apples last of all. I have just baked it and it's now cooling but it just really soggy with oil. It looks disgusting. Also a lot of oil ran out of the bottom of the cake tin (I did, luckily put it on a baking tray).

You added the oil too quickly. Beat the eggs whilst drizzling the oil in.

Are you sure the recipe only required 2 eggs?

You're talking about 9 ounces of flour, sugar, etc... I would have thought 3 eggs for that.

It definitely said 2 eggs. It also says it's a nice moist cake - they're not kidding!

... sorry - yes I did put all the oil in at once. oops. It didn't say to drizzle it in though in fairness.
Without seeing the actual method, if I were to make that recipe, I would start by beating the eggs, slowly drizzling in the oil whilst still whisking, and then sieving in the dry ingredients a bit at a time, whilst still continuing to whisk.

It's the same principle when you make your own mayonnaise. You have to drizzle the oil in slowly.

It's my birthday next week and I'm going out for a meal. I'm hoping for a chocolate fountain instead of a cake. I've dropped a few subtle hints... lol

It's my birthday today.I really shouldn't be making my own cake anyway should I? My husband is cooking my dinner, but he can't make cakes. Obviously neither can I. I'll have to stick with pastry - I can make nice pastry. Still the birdies will enjoy the cake in the morning. We still have loads of snow and they're all hungry.
