Recipes using Trex
Can anyone give me some ideas on using Trex. I recently bought it for the first time for a cupcake icing, which was fine. But I only needed very little of it and have no idea what to do with the rest.

How about these from Nigella? I've made them and everybody loved them.
Ingredients: (Makes about 30)
75g Light Muscovado Sugar, plus more for dipping
100g Unsalted Butter
50g Vegetable Shortening such as Trex
1 Large Egg
1 teaspoon Vanilla Extract
175g Self-Raising Flour
125g Salted Peanuts
Steps:
1. Preheat the oven to 190 degree C/gas mark 5.
2. Mix together sugar, butter, shortening, egg and vanilla. Just beat it together, to combine.
3. Stir in Flour and then the peanuts.
4. Drop the dough in rounded teaspoons on baking sheets about 5cm apart.
5. Oil the bottom of a glass , dip it on some light muscovado sugar and press gently on the biscuits to flatten them.
6. Bake for 8-10mins, Remove from oven and cool on wire rack before storing in air tight container.

You should be able to use Trex vegetable fat in any recipe that calls for butter. You just need to remember to reduce the quantity by 20% because butter contains water and Trex doesn't.

Vegetarians might not agree with you about Trex just being expensive lard!
Lard is made from animal fats, while Trex is made solely from vegetable fats.
Further, while there are loads of 'non dairy spreads' available, true 'margarine' (which has a statutory definition with regard to its ingredients) hasn't been sold in the UK for many years.

185g plain flour
pinch salt
1/4 teaspoon bicarbonate of soda
60g butter
65g Trex
1/2 teaspoon vanilla essence
1 mediumegg,lightly beaten
225g choccolate, broken up into smallish chunks (or chopped)
oven onto 180c
sieve the flour, salt and bicarb together
cream the sugar, Trex and butter together till soft and light and fluffy, add the egg a bit at a time then stir in the flour mix till JUST combined, scoop tablesppons of the mix onto baking sheets lined with greaseproof or baking parchment and press the chocolate chunks into them, bake for about 8-10 minutes or until golden brown and slightly puffed... cool on the sheet and munch!
