You pour it slowly onto the coffee over the back of a spoon. The spoon should touch the side of the cup/glass. If you pour too quickly the cream will mix with the coffee.

Thanks for that ursula62, but I tried that and it still mixed. Is there a special type of cream  to use?
As long as it is double cream you useit should float.  It will work if you use the front of the spoon as well s long as it is touching the top of the coffee.  Also wait until the coffee has stopped going around in a circle after stirring.  Also some say that it will not float if you have no sugarin coffee, it will float as long as you are careful.
I'm pretty definite you need the sugar there.  I'm sure in fact that it won't float without it.

Very lightly whipped cream is best, just enough to put some air in it.

Thanks for all the replies,

So the foolproof method I've ended up with is,

1) Add sugar (or Tia Maria in my case)  first

2) Add double cream, lightly whipped, poured slowly over  the back of a spoon.

3) Drink

4) Wipe big creamy moustache off top lip :)

It will definately float if you whip it lightly this makes it lighter than the coffee. Cheers! Shaz X
