I've got a lovely 2.3kg (a whopper!) leg of lamb on the bone. I want to roast it REALLY REALLY slowly, (maybe about 80 deg C)...any tips suggestions for how long it needs to be in the oven for? If I'd rosted iot at 160 it'd take approx 2.5hrs...shall I just double that to 5 hrs if I halve the oven temp to 80deg?
thanks and...ahppy easter all

Morning eve,why do you want to overcook it?i also have a leg of lamb which i like just with a tinge of pink, glad to hear that you are still using water on the bottom of the tray,do not put foil on it,seaon well and cook on a lowish oven for a few hours not 5 hours it will be hellish to slice and will all break up!
evedawn, from bitter experience, I don't personally think that leg of lamb is very good for slow cooking. Shoulder is much better for that. I did a slow roast leg of lamb for Good Friday supper, and it was Ok, but not great. The recipe said roast it for 30 minutes, then for 7hours, but I think that 5 would have been more than enough. Stick to shoulder of lamb next time.
