Had some of the above at a hotel about a year ago and they were out of this world. Anybody give me a good recipe for these.

1. Slice onions into 1/4-inch wide rings.
2. Heat mix of oil and butter in a heavy bottomed pan
3. Add onions and a small amount of sugar/honey and slowly cook over medium heat.
4. Cook until onions are caramel colored, stirring often, 30 to 40 minutes.
5. For more flavor, add a touch of vinegar or lemon juice at the end of cooking, stirring to deglaze the pan

My wife does them with shallots.
Peel and leave them whole.
Put in saucepan with a bit of salt and enough water to cover. Bring to boil and simmer for 6 minutes.
Drain, making sure all water is out of the pan.
Add a large knob of butter and a drop of olive oil and put on low heat, covered.
Stir gently frequently.
When the onions start to brown, add plenty of sugar and cook for a few minutes over a low heat with the lid off.
Makes a mess of the pan, but delicious.
