I asked same question in our local take away and was told they use brown sugar and dried scallop. But i guess it could be different from shop to shop.
It can be anything from palm sugar, fish sauce (nam pla) oyster sauce or even sesame oil and soy sauce
It tends to be spring greens.
Sainsbury's sell it,and(their's at least )as NM says is usually deep fried spring greens.
What I have always wondered is,how can they (under the trade descriptions act) call it "seaweed" when there is absolutely NO seaweed in it!
Any thoughts?
Different cultures have different names for things.

We say chips, the yanks say fries....
