Anyone got a quick n easy recipe for Morroccan Lamb Tagine?

That's ok for in the week, but this is a special meal a deux and I always cook 'properly' at weekends. (Unless it's hot outside, then it's outdoor simple picnic or barbie eating.....)
I would recommend cous cous with fruit such as sultanas and apricots, and a yogurt and mint sauce to compliment. If you feel like pushing the boat out, try making some moroccan flat breads. I do know of a Vegetarian who loves her Moroccan Lamb - but that's another story ;-)

I'll have to leave out the sultanas, cos I hate them.

this is delicious but well worth doing the marinading the night before. I don't mind a bit of couscous but dont like too much so could do a bit of cous cous and a bit of rice - even basmati rice would be good. Also recommend a bit of naan bread or pitta bread with it. In Morocco we were large salad type starters before the tagine and then no rice etc, just some bread.
ps......... i chop the apricots quite finely, actually not putting in as much as the recipe suggests and also put a sprinkling of crushed walnuts in.
